Are you tired of eating the ‘everyday’ egusi or okra soup? Is vegetable soup and all the other related soups now boring to you? Then it is time you tried groundnut soup and really, you may likely not get away from it anytime soon once you have had a taste of it.
Granted, the soup is not widely known in every part of
Nigeria but to those who know groundnut soup, it is incredible! It is popular
soup in the South-south region of the country, especially among the Etsako
people of Edo State. They call it Omisagwe.
As the name implies, the soup is made with groundnut.
Despite the fact that ground contains high calories, it is also rich in Vitamin
A,B,C and E and it contains calcium, iron and zinc.
According to experts too, it helps in controlling
diseases and helps to reduce excessive menstrual bleeding.
Groundnut soup is easy to make and it is also very
affordable.
INGREDIENTS
Assorted meat (washed and cut into desired sizes)
Smoked fish (washed and shredded)
Stockfish (washed)
Roasted groundnut
Crayfish (ground)
Fresh tomatoes (blended)
Ground pepper (blended)
Onion (sliced)
Scent leaves
Salt to taste
HOW TO COOK
Put the washed assorted meat in a pot, add onions, salt
and seasoning cubes, the boil for come minutes.
Add palm oil and pepper.
Blend the roasted groundnut with crayfish thoroughly
to form a paste.
Add the paste to the soup.
Stir and add the scent leaves, cook for ten minutes
